Ingredients

  • 2 lb. round steak (1-inch thick), cut into serving pieces
  • enriched flour
  • 6 medium onions, sliced
  • 1/4 c. fat
  • 3 large potatoes, sliced
  • 1 bay leaf
  • 1 or 2 cans tomato soup
  • 1 can French-cut green beans, drained

Method

  • Season meat with 2 teaspoons salt and dash of pepper. Roll in flour. Cook onions in hot fat until tender but not brown; remove onion and brown meat slowly on both sides. Place meat in 3-quart casserole; add onions, potatoes and bay leaf. Pour soup over. Cover and bake at 350° for 1 hour and 45 minutes. Add beans; cook 10 to 15 minutes more.
