Ingredients

  • half chicken per person
  • 1/4 c. flour
  • 1 tsp. salt
  • pepper
  • 2 Tbsp. oil

Method

  • Wash
  • chicken
  • in
  • water.
  • Cut away skin and fat.
  • Discard. Cut the chicken into pieces, dip in cold water and wipe dry. Shake
  • the chicken
  • pieces in a paper bag with seasoned flour (flour, salt and pepper).
  • Preheat the Dutch oven. When it is hot,
  • put
  • in
  • 2 tablespoons of cooking oil and add the chicken pieces.
  • Brown
  • until golden.
  • Put lid on oven and add coals
  • on top.
  • Bake, basting the chicken occasionally, for 15 minutes. Turn the pieces over and cook 15 minutes more.
