Ingredients

  • 8 chicken drumsticks
  • 1/4 cup orange marmalade
  • 1/4 cup orange juice
  • 2 tablespoons butter melted
  • 1 tablespoon dijon mustard
  • 1 tablespoon maple syrup
  • 1 tablespoon olive oil
  • 2 cloves garlic crushed
  • vegetables Maple
  • 6 carrots cut into wedges
  • 2 parsnips peeled, cut into wedges
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • salad greens to serve

Method

  • Preheat oven to 400°F. Line a baking dish with foil or parchment paper.
  • Arrange chicken in a single layer in dish. In a small bowl, combine marmalade, juice, butter, mustard, syrup, oil and garlic. Brush liberally over chicken.
  • Bake 35-40 minutes, turning once, until cooked through (juice will run clear when tested with a skewer).
  • Meanwhile to make maple vegetables, line a baking sheet with parchment paper. Mix carrots, parsnips, syrup and oil together. Spread in a single layer on baking sheet and season to taste. Bake 25-30 minutes, until lightly golden and tender.
  • Serve chicken with vegetables and drizzled pan juices. Accompany with salad greens.
