- 2 1/2 c. cooked, diced chicken
- 1 Tbsp. salad oil
- 1 Tbsp. orange juice
- 1 Tbsp. vinegar
- 1/2 tsp. salt
- 1 1/2 c. cooked white rice
- 3/4 c. green grapes, halved
- 3/4 c. diced celery
- 1/2 c. toasted almonds
- 1 (8 oz.) can pineapple tidbits, drained
- 1 c. drained mandarin oranges
- 3/4 to 1 c. mayonnaise
Method
- Mix first 5 ingredients and let stand while preparing the rest.
- Mix remaining ingredients and chill for one hour or more. Serve on lettuce as main course.
- Serves 6 to 8.
