Ingredients

  • 2 1/2 c. cooked, diced chicken
  • 1 Tbsp. salad oil
  • 1 Tbsp. orange juice
  • 1 Tbsp. vinegar
  • 1/2 tsp. salt
  • 1 1/2 c. cooked white rice
  • 3/4 c. green grapes, halved
  • 3/4 c. diced celery
  • 1/2 c. toasted almonds
  • 1 (8 oz.) can pineapple tidbits, drained
  • 1 c. drained mandarin oranges
  • 3/4 to 1 c. mayonnaise

Method

  • Mix first 5 ingredients and let stand while preparing the rest.
  • Mix remaining ingredients and chill for one hour or more. Serve on lettuce as main course.
  • Serves 6 to 8.
