Ingredients

  • 1/4 c. sugar
  • 5 tsp. cornstarch
  • dash of salt
  • 2/3 c. milk
  • 1 egg yolk, slightly beaten
  • 1 Tbsp. butter
  • 1/2 tsp. grated orange peel
  • 4 tsp. orange juice
  • 1 baked pie shell

Method

  • In a large saucepan, combine sugar, cornstarch and salt; gradually add milk.
  • Cook over medium heat, stirring constantly, until thickened.
  • Cook 2 additional minutes.
  • Blend a small amount of hot mixture into egg yolk; return all to pan.
  • Cook 1 minute (do not boil).
  • Remove from heat.
  • Add butter, orange peel and juice.
  • Pour into pie shell.
  • Cover top with meringue.
