Ingredients
- 1/4 c. sugar
- 5 tsp. cornstarch
- dash of salt
- 2/3 c. milk
- 1 egg yolk, slightly beaten
- 1 Tbsp. butter
- 1/2 tsp. grated orange peel
- 4 tsp. orange juice
- 1 baked pie shell
Method
- In a large saucepan, combine sugar, cornstarch and salt; gradually add milk.
- Cook over medium heat, stirring constantly, until thickened.
- Cook 2 additional minutes.
- Blend a small amount of hot mixture into egg yolk; return all to pan.
- Cook 1 minute (do not boil).
- Remove from heat.
- Add butter, orange peel and juice.
- Pour into pie shell.
- Cover top with meringue.
