Ingredients

  • 1/2 watermelon flesh scooped out with a melon baller, juice reserved
  • 4 oranges 2 peeled, segments removed, 2 juiced
  • 1 tablespoon cornstarch
  • 2 tablespoons sugar
  • 3 tablespoons orange liqueur
  • 1 tablespoon pistachios chopped
  • mint leaves to garnish

Method

  • Place the fruit juices in a pan and add 1/2 cup water. Mix the cornstarch with 1-2 tbsp water until smooth, then add to the pan. Bring to a boil, stirring, until thickened. Mix in the sugar and remove from the heat. Stir in the orange liqueur. Chill.
  • To assemble, add the fruit to 4 cocktail glasses then pour in the chilled juice mixture. Sprinkle with pistachios and garnish with mint to serve.
