Ingredients
- 1/2 watermelon flesh scooped out with a melon baller, juice reserved
- 4 oranges 2 peeled, segments removed, 2 juiced
- 1 tablespoon cornstarch
- 2 tablespoons sugar
- 3 tablespoons orange liqueur
- 1 tablespoon pistachios chopped
- mint leaves to garnish
Method
- Place the fruit juices in a pan and add 1/2 cup water. Mix the cornstarch with 1-2 tbsp water until smooth, then add to the pan. Bring to a boil, stirring, until thickened. Mix in the sugar and remove from the heat. Stir in the orange liqueur. Chill.
- To assemble, add the fruit to 4 cocktail glasses then pour in the chilled juice mixture. Sprinkle with pistachios and garnish with mint to serve.
