Ingredients
- 2 teaspoons vegetable oil
- 1 12 lbs onions, finely chopped
- 6 scallions, thinly sliced
- 2 cloves garlic, minced
- 34 cup orzo
- 1 cup chicken broth
- salt and pepper
- 13 cup grated parmesan cheese
Method
- In a medium saucepan, heat the oil over moderate heat.
- Saute the onions, scallions and garlic for 7 minutes or until the onions are soft.
- Cook, stirring occasionally until the onions are golden.
- Stir in the orzo.
- Add the broth, 1 cup water and salt and pepper.
- Bring to a boil, reduce to a simmer, cover and cook for 20 minutes or until the orzo is tender.
- Stir in the Parmesan.
