Ingredients

  • 2 teaspoons vegetable oil
  • 1 12 lbs onions, finely chopped
  • 6 scallions, thinly sliced
  • 2 cloves garlic, minced
  • 34 cup orzo
  • 1 cup chicken broth
  • salt and pepper
  • 13 cup grated parmesan cheese

Method

  • In a medium saucepan, heat the oil over moderate heat.
  • Saute the onions, scallions and garlic for 7 minutes or until the onions are soft.
  • Cook, stirring occasionally until the onions are golden.
  • Stir in the orzo.
  • Add the broth, 1 cup water and salt and pepper.
  • Bring to a boil, reduce to a simmer, cover and cook for 20 minutes or until the orzo is tender.
  • Stir in the Parmesan.
