Ingredients

  • 1 lb. hamburger
  • 1 Tbsp. butter
  • 1 c. sliced carrots
  • 2 c. sliced raw potatoes
  • 1/2 c. onion, chopped
  • 1/2 c. uncooked rice
  • 2 c. tomatoes
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 c. hot water or 1 c. tomato juice

Method

  • Brown hamburger in butter.
  • Place a layer of meat in a 2-quart casserole dish.
  • Top with a layer of each vegetable and rice.
  • Put rice on top of meat layer.
  • Sprinkle with salt and pepper.
  • Pour hot water over all.
  • Cover; bake at 325° for 2 hours.
  • Add more water or juice if needed during baking.
  • Yields 6 to 8 servings.
