Ingredients

  • 2 Eggs
  • 1 Tablespoon Freshly Minced Parsley
  • 1 teaspoon Olive Oil
  • 2 Tablespoons Creamy Yogurt
  • 2 cloves Garlic, Crushed
  • Salt And Pepper, to taste

Method

  • In a bowl, beat the eggs. Add parsley and a dash of salt and pepper. Mix well.
  • In a medium sized skillet or pan, heat the olive oil over medium heat. Add the egg mixture and turn the pan so that the egg coats the bottom of the pan. Let eggs cook.
  • In a small bowl, mix yogurt and crushed garlic (adding garlic is optional) then spread the yogurt on your plate.
  • When eggs are cooked to your liking, fold the cooked omelette in half and slide it on the plate.
  • Garnish with fresh parsley.
