Ingredients
- 1/2 c. shortening
- 1 c. brown sugar
- 2 eggs, beaten
- 1 c. pumpkin or squash, either cooked or canned
- 2 c. flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. allspice
- 1/2 tsp. salt
Method
- Cream shortening; beat in sugar gradually.
- Stir in eggs and pumpkin.
- Stir in remaining ingredients.
- Pour into a well-greased 9 x 5 x 3-inch loaf pan.
- Bake in preheated 350° oven for 55 minutes to 1 hour.
- Test with tester before removing from oven. Cool before slicing.
