Ingredients

  • 1/2 c. shortening
  • 1 c. brown sugar
  • 2 eggs, beaten
  • 1 c. pumpkin or squash, either cooked or canned
  • 2 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. allspice
  • 1/2 tsp. salt

Method

  • Cream shortening; beat in sugar gradually.
  • Stir in eggs and pumpkin.
  • Stir in remaining ingredients.
  • Pour into a well-greased 9 x 5 x 3-inch loaf pan.
  • Bake in preheated 350° oven for 55 minutes to 1 hour.
  • Test with tester before removing from oven. Cool before slicing.
