Ingredients
- 4 whole Chicken Breasts, Cooked And Sliced
- 4 slices Multigrain Bread
- 1 teaspoon Olive Oil
- 1/4 cups Prepared Olive Tapenade
- 1 jar Sliced Roasted Red Peppers, 12 Ounce Jar
- 4 ounces, weight Crumbled Goat Cheese
Method
- 1.
- Boil the chicken breasts until cooked through.
- Then slice the breasts into strips.
- (This recipe is also a good use for already-cooked chicken leftovers, which cuts down on the cooking time even more!)
- 2.
- Heat the oven to broil.
- 3.
- Brush the bread slices with olive oil and toast lightly.
- 4.
- Top the toasted bread slices with, in order: Olive tapenade, sliced red pepper, sliced chicken, and crumbled goat cheese.
- 5.
- Broil until the cheese is melted and slightly browned.
