Ingredients

  • 4 whole Chicken Breasts, Cooked And Sliced
  • 4 slices Multigrain Bread
  • 1 teaspoon Olive Oil
  • 1/4 cups Prepared Olive Tapenade
  • 1 jar Sliced Roasted Red Peppers, 12 Ounce Jar
  • 4 ounces, weight Crumbled Goat Cheese

Method

  • 1.
  • Boil the chicken breasts until cooked through.
  • Then slice the breasts into strips.
  • (This recipe is also a good use for already-cooked chicken leftovers, which cuts down on the cooking time even more!)
  • 2.
  • Heat the oven to broil.
  • 3.
  • Brush the bread slices with olive oil and toast lightly.
  • 4.
  • Top the toasted bread slices with, in order: Olive tapenade, sliced red pepper, sliced chicken, and crumbled goat cheese.
  • 5.
  • Broil until the cheese is melted and slightly browned.
