Ingredients
- 3 eggs
- 1 lb. can pumpkin
- 3/4 c. oil
- 1/2 c. water
- 2 1/2 c. all-purpose flour
- 2 1/4 c. sugar
- 1 1/2 tsp. baking soda
- 1 1/4 tsp. salt
- 3/4 tsp. nutmeg or 1 tsp.
- 3/4 tsp. cinnamon or 1 tsp.
- 1 c. yellow raisins
- 1/2 c. chopped walnuts or 1 c.
Method
- In a
- large
- bowl, beat together eggs, pumpkin, oil and water. Add flour, sugar, baking soda, salt, nutmeg, cinnamon, raisins and
- walnuts.
- Pour
- the
- batter
- into
- buttered (1 pound) coffee cans.
- Place
- in
- oven at 350° for 1 hour and 15 minutes or until straw inserted in the cake comes out clean.
