Ingredients
- 2 c. flour
- 1/2 c. sugar
- 2 tsp. baking powder
- 1 tsp. salt
- 1/4 c. oleo, softened
- 1/4 c. shortening
- 1/2 c. milk
- 1/2 tsp. vanilla
- 2 eggs, beaten
Method
- Preheat oven to 400°.
- Grease twelve 2 1/2-inch muffin pan cups; set aside.
- In medium bowl, combine dry ingredients; mix well.
- Using pastry blender, cut in oleo and shortening until mixture resembles fine crumbs.
- Combine milk, vanilla and eggs. Add to dry ingredients all at once, stirring just until moistened. Do not overmix.
- Spoon batter into prepared cups, filling each 3/4 full.
- Bake 20 to 25 minutes or until golden brown. Immediately remove from pan to cooling rack.
- Serve warm.
- Makes one dozen.
