Ingredients

  • 2 c. flour
  • 1/2 c. sugar
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1/4 c. oleo, softened
  • 1/4 c. shortening
  • 1/2 c. milk
  • 1/2 tsp. vanilla
  • 2 eggs, beaten

Method

  • Preheat oven to 400°.
  • Grease twelve 2 1/2-inch muffin pan cups; set aside.
  • In medium bowl, combine dry ingredients; mix well.
  • Using pastry blender, cut in oleo and shortening until mixture resembles fine crumbs.
  • Combine milk, vanilla and eggs. Add to dry ingredients all at once, stirring just until moistened. Do not overmix.
  • Spoon batter into prepared cups, filling each 3/4 full.
  • Bake 20 to 25 minutes or until golden brown. Immediately remove from pan to cooling rack.
  • Serve warm.
  • Makes one dozen.
