Ingredients

  • 1 c. roasted red peppers, patted dry and chopped (about 2 peppers)
  • 1/2 c. packed basil leaves, chopped
  • 2 Tbsp. olive oil
  • 1 oz. medium-grated Parmesan cheese
  • 1 (11 oz.) long loaf Italian bread, halved lengthwise
  • 1 large clove garlic, peeled and halved crosswise

Method

  • Heat broiler or grill.
  • In bowl, combine peppers, basil, oil and cheese.
  • Place bread, cut side up, on rack 4-inches from heat source (or cut side down on grill over medium coals); toast 3 minutes or until golden.
  • Rub with garlic; top with pepper mixture and return to broiler 2 minutes or until cheese melts.
  • Cut crosswise into 8 pieces.
