Ingredients
- 1 c. roasted red peppers, patted dry and chopped (about 2 peppers)
- 1/2 c. packed basil leaves, chopped
- 2 Tbsp. olive oil
- 1 oz. medium-grated Parmesan cheese
- 1 (11 oz.) long loaf Italian bread, halved lengthwise
- 1 large clove garlic, peeled and halved crosswise
Method
- Heat broiler or grill.
- In bowl, combine peppers, basil, oil and cheese.
- Place bread, cut side up, on rack 4-inches from heat source (or cut side down on grill over medium coals); toast 3 minutes or until golden.
- Rub with garlic; top with pepper mixture and return to broiler 2 minutes or until cheese melts.
- Cut crosswise into 8 pieces.
