Ingredients
- 3 to 3 1/2 lb. broiler fryer chicken, cut up
- 2 Tbsp. margarine
- 1 c. quick-cooking oats
- 1/4 c. grated parmesan cheese
- 1/2 tsp. pepper
- 2 egg whites
Method
- Heat oven to 375°.
- Remove skin and fat from chicken pieces. Heat margarine in rectangular pan, 13 x 19 x 2 inches, in oven until melted.
- Mix remaining ingredients except egg whites.
- Dip chicken into egg whites; coat with oat mixture.
- Place meaty sides down in pan.
- Bake uncovered 30 minutes turn and bake 20 to 30 minutes longer or until juices run clear.
- 6 servings.
