Ingredients

  • 3 to 3 1/2 lb. broiler fryer chicken, cut up
  • 2 Tbsp. margarine
  • 1 c. quick-cooking oats
  • 1/4 c. grated parmesan cheese
  • 1/2 tsp. pepper
  • 2 egg whites

Method

  • Heat oven to 375°.
  • Remove skin and fat from chicken pieces. Heat margarine in rectangular pan, 13 x 19 x 2 inches, in oven until melted.
  • Mix remaining ingredients except egg whites.
  • Dip chicken into egg whites; coat with oat mixture.
  • Place meaty sides down in pan.
  • Bake uncovered 30 minutes turn and bake 20 to 30 minutes longer or until juices run clear.
  • 6 servings.
