Ingredients

  • 24 oz great norther beans, drained and rinsed.
  • 3 T olive oil
  • 2 cloves of garlic, minced
  • 1 C chopped onion
  • 14.5 oz diced tomatoes, drained
  • 2/3 c chopped parsley
  • salt and pepper to taste
  • 2 T lemon juice

Method

  • Saute onion in oil over medium heat for five minutes. Add garlic for last two minutes. Add tomatoes and parsley, and cook five minutes more. Add beans and cook over low heat for five more minutes.
  • Add salt and pepper to taste. Add lemon juice and mix well. Serve hot or cold.
