Ingredients

  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. salt
  • 1 envelope Knox unflavored gelatine
  • 1 Keebler Ready-Crust graham cracker pie crust
  • 1 can evaporated milk
  • 2 Tbsp. water
  • 1 egg, slightly beaten
  • 1 can (16 oz.) pumpkin
  • 16 pkg. Equal brand sweetener

Method

  • In small bowl, blend Equal with evaporated milk.
  • Add egg, cinnamon, ginger, nutmeg and salt.
  • Blend and set aside.
  • In medium saucepan, sprinkle unflavored gelatine over water; let stand 1 minute.
  • Stir over low heat until gelatine is completely dissolved, about 2 minutes.
  • Blend in milk mixture.
  • Continue stirring over low heat until mixture is slightly thickened; about 5 minutes. Blend in pumpkin.
  • Turn into crust.
  • Chill until firm.
  • Garnish if desired with whipped cream.
  • Makes 8 servings.
