Ingredients
- 1 (No. 2) can crushed pineapple
- 1 c. sugar
- 1 Tbsp. (1 pkg.) unflavored gelatin
- 1/4 c. cold water
- 3/4 c. nuts, chopped
- 1 (3 oz.) pkg. cream cheese
- 1/2 pt. whipping cream
Method
- Boil pineapple and sugar together for 5 minutes.
- Dissolve gelatin in cold water.
- Add to hot pineapple and stir until dissolved.
- Chill until the mixture is the consistency of unbeaten egg whites.
- Soften cream cheese and whip with a fork until smooth.
- Stir in nuts and add to pineapple mixture.
- Whip cream and fold into the salad.
- Pour into mold or dish.
- Keep in refrigerator.
- You can add a few chopped green and/or red maraschino cherries.
