Ingredients

  • 1 (No. 2) can crushed pineapple
  • 1 c. sugar
  • 1 Tbsp. (1 pkg.) unflavored gelatin
  • 1/4 c. cold water
  • 3/4 c. nuts, chopped
  • 1 (3 oz.) pkg. cream cheese
  • 1/2 pt. whipping cream

Method

  • Boil pineapple and sugar together for 5 minutes.
  • Dissolve gelatin in cold water.
  • Add to hot pineapple and stir until dissolved.
  • Chill until the mixture is the consistency of unbeaten egg whites.
  • Soften cream cheese and whip with a fork until smooth.
  • Stir in nuts and add to pineapple mixture.
  • Whip cream and fold into the salad.
  • Pour into mold or dish.
  • Keep in refrigerator.
  • You can add a few chopped green and/or red maraschino cherries.
