Ingredients
- 2 c. mixed black beans, black-eyed peas, garbanzo beans, kidney beans, lentils, lima beans, mung beans, pinto beans, soybeans, split peas and/or white beans
- 2 qt. water
- 1 (1 lb.) ham bone, skin and fat removed
- 1 large onion, chopped
- 1 clove garlic, minced
- 2 bay leaves
- 1 (16 oz.) can tomatoes, coarsely chopped
- 1/2 tsp. basil
- 1/2 tsp. oregano
- 1 (15 oz.) can seasoned tomato sauce
Method
- Rinse beans.
- Place in large stockpot with enough water to cover by 2 inches.
- Let soak overnight.
- Drain.
- Add 2 quarts water, ham bone, onion, garlic and bay leaves.
- Bring to a boil. Reduce heat.
- Simmer for 1 1/2 to 2 hours or until beans are tender, stirring occasionally.
- Add tomatoes, basil, oregano and tomato sauce.
- Simmer for 30 minutes longer.
- Remove ham bone and bay leaves.
- Serve hot.
