Ingredients

  • 2 c. mixed black beans, black-eyed peas, garbanzo beans, kidney beans, lentils, lima beans, mung beans, pinto beans, soybeans, split peas and/or white beans
  • 2 qt. water
  • 1 (1 lb.) ham bone, skin and fat removed
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 2 bay leaves
  • 1 (16 oz.) can tomatoes, coarsely chopped
  • 1/2 tsp. basil
  • 1/2 tsp. oregano
  • 1 (15 oz.) can seasoned tomato sauce

Method

  • Rinse beans.
  • Place in large stockpot with enough water to cover by 2 inches.
  • Let soak overnight.
  • Drain.
  • Add 2 quarts water, ham bone, onion, garlic and bay leaves.
  • Bring to a boil. Reduce heat.
  • Simmer for 1 1/2 to 2 hours or until beans are tender, stirring occasionally.
  • Add tomatoes, basil, oregano and tomato sauce.
  • Simmer for 30 minutes longer.
  • Remove ham bone and bay leaves.
  • Serve hot.
