Ingredients
- 1 1/2 lb. new potatoes
- 1 large sprig basil
- 4 oz. butter
- 4 Tbsp. chopped basil
- salt and pepper to taste
- basil sprigs (to garnish)
Method
- Place potatoes in a saucepan of cold water with the sprig of basil.
- Bring to boil, then cover and simmer until potatoes are tender.
- Drain and remove basil.
- Melt butter in a pan; add chopped basil and cook for 30 seconds, stirring, taking care not to brown the butter.
- Toss the potatoes in the butter; spoon into serving dish and garnish with basil sprig.
- Serve immediately.
- Serves 4. Essential to use fresh basil or half a jar of pesto.
