Ingredients

  • 1 1/2 lb. new potatoes
  • 1 large sprig basil
  • 4 oz. butter
  • 4 Tbsp. chopped basil
  • salt and pepper to taste
  • basil sprigs (to garnish)

Method

  • Place potatoes in a saucepan of cold water with the sprig of basil.
  • Bring to boil, then cover and simmer until potatoes are tender.
  • Drain and remove basil.
  • Melt butter in a pan; add chopped basil and cook for 30 seconds, stirring, taking care not to brown the butter.
  • Toss the potatoes in the butter; spoon into serving dish and garnish with basil sprig.
  • Serve immediately.
  • Serves 4. Essential to use fresh basil or half a jar of pesto.
