Ingredients

  • 1 lb. ground beef round
  • 1 medium onion, chopped
  • 1-1/2 c. water
  • 1 can (10-1/2 oz.) golden mushroom soup
  • 1 pkg. (10 oz.) frozen whole kernel corn
  • 1/2 tsp. salt
  • 1 tsp. chili powder
  • 1-1/2 c. quick cooking rice
  • 1 medium tomato, cut in wedges
  • 1 green bell pepper, cut in strips

Method

  • Brown meat in skillet, leaving in large chunks.
  • Add onion, cook until tender.
  • Add water, soup, corn, salt and chili powder. Bring to a boil.
  • Stir in rice, tomatoes, and green pepper. Cover.
  • Simmer 5 minutes.
  • Fluff with fork.
