- 3 lb. broiler-fryer chicken, cut up
- 1/4 c. flour
- 2 Tbsp. salad oil
- 1 clove garlic, chopped
- 1 (4 oz.) can sliced mushrooms
- 1/4 c. soy sauce
- 1/4 c. catsup
- 1/4 c. white wine
- 1 medium onion, sliced
- 1/4 c. black olives, sliced
Method
- Coat chicken thoroughly with flour.
- Brown slowly in hot oil with garlic.
- Drain mushrooms, reserving liquid.
- Add mushroom liquid, soy sauce, catsup, wine and onion to chicken, stirring to combine.
- Cover and simmer 45 minutes or until chicken is tender. Stir in mushrooms and olives; bring to boil.
- Serve immediately. Makes 4 to 6 servings.
