Ingredients

  • 3 lb. broiler-fryer chicken, cut up
  • 1/4 c. flour
  • 2 Tbsp. salad oil
  • 1 clove garlic, chopped
  • 1 (4 oz.) can sliced mushrooms
  • 1/4 c. soy sauce
  • 1/4 c. catsup
  • 1/4 c. white wine
  • 1 medium onion, sliced
  • 1/4 c. black olives, sliced

Method

  • Coat chicken thoroughly with flour.
  • Brown slowly in hot oil with garlic.
  • Drain mushrooms, reserving liquid.
  • Add mushroom liquid, soy sauce, catsup, wine and onion to chicken, stirring to combine.
  • Cover and simmer 45 minutes or until chicken is tender. Stir in mushrooms and olives; bring to boil.
  • Serve immediately. Makes 4 to 6 servings.
