Ingredients

  • 2 packages Oxtails
  • 1 whole Large Yellow Onion
  • 1 Tablespoon Parsley
  • Salt And Pepper, to taste
  • 10 whole Red Potatoes
  • 1/2 packages Carrots

Method

  • ** The quantity of vegetables and oxtails that you use in this recipe varies depending on the size of your pressure cooker adjust accordingly.

  • Brown the oxtails in your pressure cooker.
  • Add onion (cut in large pieces), parsley, salt & pepper.
  • Cover with water.
  • Cook in the pressure cooker for 45 minutes or so (approximately 15 minutes per pound).
  • After 45 minutes, add potatoes and carrots and more water (per instructions for your pressure cooker) and cook in the pressure cooker for approximately 8 to 10 minutes.
  • Serve over rice.
