- 2 packages Oxtails
- 1 whole Large Yellow Onion
- 1 Tablespoon Parsley
- Salt And Pepper, to taste
- 10 whole Red Potatoes
- 1/2 packages Carrots
Method
- ** The quantity of vegetables and oxtails that you use in this recipe varies depending on the size of your pressure cooker adjust accordingly.

- Brown the oxtails in your pressure cooker.
- Add onion (cut in large pieces), parsley, salt & pepper.
- Cover with water.
- Cook in the pressure cooker for 45 minutes or so (approximately 15 minutes per pound).
- After 45 minutes, add potatoes and carrots and more water (per instructions for your pressure cooker) and cook in the pressure cooker for approximately 8 to 10 minutes.
- Serve over rice.
