Ingredients

  • 2 avocados ripe, peeled, 1 roughly chopped, 1 diced
  • 1 clove garlic peeled and roughly chopped
  • 1 tablespoon lemon juice
  • 30 tortilla chips
  • 3 red chilies 1 deseeded and diced, 2 left whole
  • 5 ounces mozzarella grated
  • red cabbage
  • bean sprouts
  • lime slices

Method

  • Place the chopped avocado, garlic and lemon juice in a blender and puree. Season with salt and black pepper. Fold in the diced avocado.
  • Preheat the broiler. Line a baking tray with parchment paper and spread the tortilla chips on top. Spoon the guacamole onto the chips and sprinkle with the chili rings and cheese. Grill for 2-3 mins, until the cheese is melted.
  • Transfer to a platter and garnish with the whole chilies, red cabbage, bean sprouts and lime slices.
