- 2 avocados ripe, peeled, 1 roughly chopped, 1 diced
- 1 clove garlic peeled and roughly chopped
- 1 tablespoon lemon juice
- 30 tortilla chips
- 3 red chilies 1 deseeded and diced, 2 left whole
- 5 ounces mozzarella grated
- red cabbage
- bean sprouts
- lime slices
Method
- Place the chopped avocado, garlic and lemon juice in a blender and puree. Season with salt and black pepper. Fold in the diced avocado.
- Preheat the broiler. Line a baking tray with parchment paper and spread the tortilla chips on top. Spoon the guacamole onto the chips and sprinkle with the chili rings and cheese. Grill for 2-3 mins, until the cheese is melted.
- Transfer to a platter and garnish with the whole chilies, red cabbage, bean sprouts and lime slices.
