Ingredients

  • 1 lb. crab meat
  • pinch of salt
  • dash of red pepper or Tabasco
  • 1 Tbsp. diced green pepper
  • 5 Tbsp. mayonnaise
  • 1 Tbsp. minced onion
  • 3 eggs, well beaten
  • paprika
  • 1/4 c. cracker crumbs

Method

  • Combine crab meat, salt, red pepper, green pepper, 2 beaten eggs, 4 tablespoons mayonnaise and onion.
  • Mix well with spoon. Place in greased casserole and individual crab shells.
  • Mix remaining egg with 1 tablespoon mayonnaise.
  • Glaze crab meat mixture with egg and mayonnaise mixture.
  • Sprinkle with cracker crumbs and paprika.
  • Bake at 350° for 30 minutes.
  • Yield: 6 servings.
