Ingredients

  • 4 chicken leg pieces
  • 3 tablespoons butter melted
  • 1 tablespoon dijon mustard
  • 3 tablespoons olive oil
  • 1 tablespoon honey
  • 2 cloves garlic crushed
  • 2 parsnips thinly sliced
  • 1 tablespoon maple syrup
  • salad spinach, to serve

Method

  • Preheat oven to 400°F. Line a baking dish with foil or baking paper.
  • Arrange chicken pieces in a single layer in prepared dish.
  • In a bowl, combine butter, mustard, 1 tablespoon olive oil, honey and garlic. Brush liberally over chicken.
  • Bake chicken 25-30 minutes, turning once, until cooked through.
  • Meanwhile, in a bowl, toss together parsnips, remaining olive oil and maple syrup. Cook in a frying pan over low heat 10-15 minutes, until parsnips are golden and tender.
  • Serve chicken with parsnips and spinach salad.
