Ingredients

  • 2lbs mussells
  • 5 minced garlic cloves
  • 2t olive oil
  • 1 28oz can whole plum tomatoes (not drained)
  • salt and pepper 1/4 t
  • 1 6oz package chopped spinach
  • Basil for garnish

Method

  • saute garlic in oil for one minute, add the tomatoes, chopped basil, salt and pepper and pinch of red pepper flakes. Simmer for 5 minutes. Add mussels and cook covered until mussels open. Pour into large serving bowl and serve over pasta (optional) and crusty bread for dipping (not optional)
