Ingredients
- 5 c. flour
- 4 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 1/4 c. margarine
- 1/2 c. sugar
- 1 egg, beaten first
- 2 1/2 to 3 c. buttermilk
- 2 c. raisins
- 1 c. currants
- 2 Tbsp. caraway seed
Method
- Mix in large bowl flour, baking powder, baking soda and salt. Cream in a small bowl margarine, sugar, egg and buttermilk.
- Add wet ingredients gradually to dry to form a stiff batter.
- Fold in raisins, currants and caraway seeds.
- Turn into a greased cast-iron skillet.
- Bake at 325° for 1 1/4 hours.
- Test with toothpick.
- Turn out of pan immediately after removing from oven.
