Ingredients

  • 5 c. flour
  • 4 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1/4 c. margarine
  • 1/2 c. sugar
  • 1 egg, beaten first
  • 2 1/2 to 3 c. buttermilk
  • 2 c. raisins
  • 1 c. currants
  • 2 Tbsp. caraway seed

Method

  • Mix in large bowl flour, baking powder, baking soda and salt. Cream in a small bowl margarine, sugar, egg and buttermilk.
  • Add wet ingredients gradually to dry to form a stiff batter.
  • Fold in raisins, currants and caraway seeds.
  • Turn into a greased cast-iron skillet.
  • Bake at 325° for 1 1/4 hours.
  • Test with toothpick.
  • Turn out of pan immediately after removing from oven.
