Ingredients
- 2 (10 oz.) pkg. frozen lima beans
- 3 Tbsp. butter or margarine
- 1/2 lb. sliced mushrooms or 4 oz. can mushrooms, drained
- 6 Tbsp. flour
- 2 c. milk
- 1/4 c. sharp Cheddar cheese, grated
- 1/2 tsp. salt
- 1/2 Tbsp. chili powder
- 1/4 tsp. pepper
Method
- Cook lima beans until tender.
- Drain and set aside.
- Melt 3 tablespoons butter or margarine in a saucepan and saute the mushrooms for 5 minutes.
- Sprinkle mushrooms with 6 tablespoons flour, then slowly add the milk.
- Stir and cook until sauce thickens and is smooth. Remove from heat and stir in cheese.
- Add the salt, pepper and chili powder.
- Mix well.
- Add the cooked lima beans and reheat.
- Serve piping hot.
