Ingredients

  • 4 beef cubed steaks
  • 1/4 tsp. salt
  • 1/4 tsp. coarsely ground black pepper
  • 2 tsp. vegetable oil
  • 1 tsp. vegetable oil
  • 1 small yellow or red pepper
  • 1/2 tsp. ground cumin
  • 1/4 tsp. ground cinnamon
  • 1 c. bottled salsa
  • 1 tbsp. brown sugar
  • 2 tbsp. chopped fresh cilantro leaves
  • sprig cilantro

Method

  • Prepare Skillet Steaks: Pat steaks dry with paper towels.
  • Sprinkle steaks with salt and pepper.
  • In nonstick 12-inch skillet, heat oil over medium-high heat until hot.
  • Add steaks and cook 5 to 6 minutes for medium, turning steaks over once.
  • When steaks are done, transfer to platter with any juice; cover with foil.
  • Prepare Moroccan-style Sauce: In same skillet, heat oil over medium heat until hot.
  • Add yellow or red pepper, cumin, cinnamon, and 1/4 cup water and cook about 5 minutes or until pepper is tender, stirring occasionally.
  • Stir in salsa, brown sugar, and another 1/4 cup water; heat to boiling over medium-high heat.
  • Boil 1 minute or until slightly reduced.
  • Remove skillet from heat; stir in chopped cilantro.
  • Return steaks with their juice to skillet; heat through.
  • Garnish with cilantro sprigs.
