Ingredients

  • 2 to 3 medium onions, sliced
  • 2 to 3 all-purpose potatoes, cut up
  • 3 to 4 carrots, sliced
  • 1 pkg. frozen cut green beans
  • 1 pkg. frozen petite peas
  • a few sprigs fresh parsley
  • 1 few lettuce leaves, cut up *
  • 1 celery stalk, cut up *
  • 2 zucchini, thickly sliced *
  • other vegetables to taste *
  • 1 (14 oz.) can whole tomatoes
  • 1 1/2 to 2 c. broth
  • salt and pepper to taste
  • small pasta (ditalini, tubetti, little shells, nothing larger than elbow macaroni)

Method

  • Brown sliced onions in oil at bottom of large soup pot.
  • Turn off heat while you prepare and add all other ingredients, except pasta.
  • The beauty of this recipe is that you can include almost anything you have and like and the amounts do not have be exact. (*The starred vegetables are definitely optional.)
