Ingredients

  • 14 cup black beans
  • 14 cup red kidney beans
  • 14 cup white navy beans
  • 14 cup white lima beans
  • 14 cup baby lima beans
  • 14 cup split peas
  • 14 cup lentils
  • 14 cup black-eyed peas
  • 14 cup pinto beans
  • 2 ham hocks
  • 1 lb kielbasa
  • 2 bay leaves
  • 2 (16 ounce) cans tomatoes
  • 2 onions, chopped
  • 2 cloves garlic, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 medium chicken
  • 2 tablespoons parsley
  • salt and pepper
  • thyme

Method

  • Wash beans, add water to cover plus 1 TB salt& soak overnight.
  • Next morning, drain& add 3 quarts water, 2 hamhocks, 2 bay leaves& thyme.
  • Cook 3 hours covered, then add tomatoes, onions, garlic, peppers, chicken, salt& pepper.
  • Simmer 1 hour, then remove chicken& hamhocks, debone.
  • Discard bones, fat& skin.
  • Return chicken& ham, cut in small pieces, to soup pot.
  • Add Kielbasa sausage, cut in thin slices,& parsley.
  • Cook till sausage is done.
  • Add water as needed-- Stir bottom often to avoid burning.
