Ingredients

  • 1 (6 oz.) pkg. red raspberry gelatin
  • 2 c. boiling water
  • 1 c. cold water
  • 1 c. ground raw cranberries
  • 1 c. sugar
  • 1 fresh apple, diced
  • 1 c. finely chopped celery
  • 1/2 c. chopped pecans

Method

  • Heat water to boiling in microwave and add gelatin and stir until dissolved.
  • Stir in cold water, cranberries and sugar. Chill until mixture is partially set.
  • Stir remaining ingredients into gelatin mix.
  • Pour mixture into a ring or mold.
  • Chill until salad is very firm.
  • Unmold on a lettuce bed and serve.
  • Makes an excellent Christmas or Thanksgiving dessert.
