Ingredients

  • 1 egg
  • 1/2 c. molasses
  • 1/3 c. sugar
  • 3 tbsp. butter
  • 1 1/2 teaspoon lemon rind
  • 1 tbsp. lemon juice
  • 2 c. flour
  • 3/4 teaspoon baking pwdr
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 c. buttermilk
  • 1/2 c. minced pecans

Method

  • Combine first 6 ingredients in large bowl, beat well.
  • Combine dry ingredients.
  • Add in to egg mix alternating with buttermilk beginning and ending with flour mix.
  • Mix well.
  • Stir in pecans.
  • Spoon batter into greased and floured loaf pan.
  • Bake at 350 degrees for 50 to 55 min.
  • Cold in pans for 10 min.
  • Remove from loaf pan and let cold completely.
  • Yields 1 loaf.
