Ingredients

  • 1 1/4 c. butter, margarine or Crisco (or parts of each)
  • 1 c. sugar
  • 4 eggs
  • 1/2 c. molasses
  • 1 tsp. soda
  • 1 tsp. baking powder
  • 1 c. buttermilk
  • 4 c. all-purpose flour
  • 1/2 tsp. cinnamon
  • 1/4 tsp. ginger or nutmeg
  • 1 tsp. vanilla
  • chopped nuts (optional)
  • chopped raisins (optional)

Method

  • Cream butter, sugar and eggs until light and fluffy.
  • Add molasses and blend.
  • Add soda to buttermilk and set aside.
  • Combine flour, baking powder and spices.
  • Add to creamed mixture, alternating with buttermilk.
  • Add vanilla, nuts and raisins, if desired.
  • Bake in greased muffin pans at 350° about 25 minutes. Makes 18.
  • Good with a lemon glaze.
