- 1 lg. shallot, chopped
- 2 tbsp. snipped chives
- 1/2 teaspoon salt
- 2/3 c. extra virgin olive oil
- 2 tbsp. lemon juice
- 1 tbsp. red wine vinegar
- 2 teaspoon Dijon mustard
- 3 bunches Arugula leaves
- 1 lg. bunch spinach
- 1 bunch watercress
- 1 head Boston lettuce
- 8 lg. mushrooms, sliced
- 2 red peppers, sliced
- 1/2 c. olives, sliced
Method
- In jar combine salad dressing ingredients and shake.
- Chill.
- Mix salad ingredients in large bowl, and toss with dressing.
- Serve immediately.
- Serves 8.
