Ingredients

  • 3 eggs
  • 1/3 cup caster sugar
  • 2 cups mixed frozen berries, thawed and pureed
  • 3 teaspoons vanilla bean paste
  • 250ml PHILADELPHIA Cream For Desserts, double cream alternative
  • fresh berries, to serve

Method

  • BEAT together the eggs and sugar with an electric mixer until thick and fluffy then stir through the pureed berries and vanilla.
  • Fold in the PHILLY until well combined.
  • POUR the mixture into a paper lined 6 cup capacity loaf pan.
  • Wrap well with plastic wrap and freeze for at least 8 hours or overnight.
  • TURN semifreddo onto a platter.
  • Remove paper.
  • Cut into slices with a hot knife and divide among serving plates.
  • Serve with fresh berries.
  • Serve immediately.
