Ingredients
- 3 eggs
- 1/3 cup caster sugar
- 2 cups mixed frozen berries, thawed and pureed
- 3 teaspoons vanilla bean paste
- 250ml PHILADELPHIA Cream For Desserts, double cream alternative
- fresh berries, to serve
Method
- BEAT together the eggs and sugar with an electric mixer until thick and fluffy then stir through the pureed berries and vanilla.
- Fold in the PHILLY until well combined.
- POUR the mixture into a paper lined 6 cup capacity loaf pan.
- Wrap well with plastic wrap and freeze for at least 8 hours or overnight.
- TURN semifreddo onto a platter.
- Remove paper.
- Cut into slices with a hot knife and divide among serving plates.
- Serve with fresh berries.
- Serve immediately.
