Ingredients

  • 1 stick margarine, melted
  • 1 1/2 c. sugar
  • 2 eggs
  • 2 to 2 1/4 c. self-rising flour, sifted
  • 1 tsp. lemon flavoring

Method

  • Beat margarine, sugar and eggs with a fork or whisk.
  • Stir in flour; start with 2 cups and add more if needed.
  • You want to have batter stiff enough to roll.
  • Add flavoring.
  • Put flour on your hands and pinch a small piece of the batter.
  • Make a ball out of the batter and press down on a greased cookie sheet.
  • Space the tea cakes about 2 inches apart as they will spread when they begin to cook.
  • Bake in a 400° oven for approximately 8 minutes.
  • Tea cakes are done when the edges look a little brown.
