Ingredients
- 1 stick margarine, melted
- 1 1/2 c. sugar
- 2 eggs
- 2 to 2 1/4 c. self-rising flour, sifted
- 1 tsp. lemon flavoring
Method
- Beat margarine, sugar and eggs with a fork or whisk.
- Stir in flour; start with 2 cups and add more if needed.
- You want to have batter stiff enough to roll.
- Add flavoring.
- Put flour on your hands and pinch a small piece of the batter.
- Make a ball out of the batter and press down on a greased cookie sheet.
- Space the tea cakes about 2 inches apart as they will spread when they begin to cook.
- Bake in a 400° oven for approximately 8 minutes.
- Tea cakes are done when the edges look a little brown.
