Ingredients

  • 2 1/2 teaspoons whole mixed pickling spices
  • 12 medium tomatoes, ripe, peeled and chopped
  • 3 large onions, chopped
  • 1 small head of celery, finely chopped
  • 1 small garlic clove, minced
  • 2 cups white vinegar
  • 1 cup sugar
  • 2 tablespoons prepared horseradish
  • 2 1/4 teaspoons salt
  • 1 teaspoon dry mustard
  • 1/2 teaspoon paprika
  • 1 large green pepper, chopped
  • 1 small red pepper, chopped

Method

  • Tie spices in a cheese cloth or place in a tea ball.
  • Combine all ingredients and bring to a boil. Turn heat down and cook slowly for 1 hour, stirring frequently.
  • Ladle into sterilze jars and seal immediately.
