- 2 1/2 teaspoons whole mixed pickling spices
- 12 medium tomatoes, ripe, peeled and chopped
- 3 large onions, chopped
- 1 small head of celery, finely chopped
- 1 small garlic clove, minced
- 2 cups white vinegar
- 1 cup sugar
- 2 tablespoons prepared horseradish
- 2 1/4 teaspoons salt
- 1 teaspoon dry mustard
- 1/2 teaspoon paprika
- 1 large green pepper, chopped
- 1 small red pepper, chopped
Method
- Tie spices in a cheese cloth or place in a tea ball.
- Combine all ingredients and bring to a boil. Turn heat down and cook slowly for 1 hour, stirring frequently.
- Ladle into sterilze jars and seal immediately.
