Ingredients
- 1 (16 oz.) can sweet potatoes, in heavy syrup
- 1/2 c. firmly packed light brown sugar
- 2 Tbsp. butter or margarine
- 1/2 tsp. grated orange rind
- 1/4 tsp. ground cinnamon
Method
- Drain sweet potatoes, reserving 1/4 cup of the syrup.
- In 2-quart microwave-safe dish,
- place brown sugar, butter, orange rind, cinnamon and reserved syrup.
- Cook at High 4 minutes, until mixture is slightly thickened.
- Add sweet potatoes, gently stirring to coat with glaze.
- Cook at High 1 minute until heated through.
