Ingredients

  • 1 (16 oz.) can sweet potatoes, in heavy syrup
  • 1/2 c. firmly packed light brown sugar
  • 2 Tbsp. butter or margarine
  • 1/2 tsp. grated orange rind
  • 1/4 tsp. ground cinnamon

Method

  • Drain sweet potatoes, reserving 1/4 cup of the syrup.
  • In 2-quart microwave-safe dish,
  • place brown sugar, butter, orange rind, cinnamon and reserved syrup.
  • Cook at High 4 minutes, until mixture is slightly thickened.
  • Add sweet potatoes, gently stirring to coat with glaze.
  • Cook at High 1 minute until heated through.
