Ingredients
- 2 c. sugar
- 1 tsp. soda
- 1 c. buttermilk
- 3/4 c. butter or margarine
- 1 tsp. vanilla
- 2 c. chopped pecans
Method
- In a large microwave-oven-safe bowl, combine sugar, soda, buttermilk, and butter.
- Cover with plastic wrap.
- Punch holes in wrap.
- Cook in microwave oven for 2 1/2 minutes.
- Stir and turn dish.
- Continue cooking for 15 minutes, stirring every 5 minutes. Return to oven for every 2 minutes, or until soft ball forms in cold water, or it tests 235° to 236° on candy thermometer (do not put thermometer in microwave unless it's microwave-safe).
- Add vanilla and beat with electric mixer until soft peaks form.
- Stir in pecans, and spread in buttered 12x7-inch dish.
