Ingredients

  • 2 c. sugar
  • 1 tsp. soda
  • 1 c. buttermilk
  • 3/4 c. butter or margarine
  • 1 tsp. vanilla
  • 2 c. chopped pecans

Method

  • In a large microwave-oven-safe bowl, combine sugar, soda, buttermilk, and butter.
  • Cover with plastic wrap.
  • Punch holes in wrap.
  • Cook in microwave oven for 2 1/2 minutes.
  • Stir and turn dish.
  • Continue cooking for 15 minutes, stirring every 5 minutes. Return to oven for every 2 minutes, or until soft ball forms in cold water, or it tests 235° to 236° on candy thermometer (do not put thermometer in microwave unless it's microwave-safe).
  • Add vanilla and beat with electric mixer until soft peaks form.
  • Stir in pecans, and spread in buttered 12x7-inch dish.
