Ingredients
- 1 (14 oz.) can artichoke hearts
- 1 c. mayonnaise (regular or diet)
- 1 c. grated Parmesan cheese
- 1 Tbsp. lemon juice
- 2 cloves garlic, minced
- 1/2 tsp. pepper (white preferred)
Method
- Drain artichokes well.
- Chop into small pieces.
- Add remaining ingredients.
- Place in 8-inch square casserole.
- Microwave on High for 2 minutes.
- Stir.
- Cook 5 to 7 minutes at 50% power.
- Allow to stand 5 minutes before serving.
- Yields 3 cups.
