Ingredients
- 2 Tbsp. olive oil
- 3/4 c. celery, chopped
- 1/2 c. green pepper, sliced
- 1/2 tsp. basil
- 1 c. Monterey Jack cheese
- 4 zucchini, thinly sliced
- 1/2 onion, chopped
- 1 1/2 tsp. picante sauce
- 1 tsp. salt
Method
- In large skillet, heat olive oil on high, saute all vegetables at once for 3 minutes, stirring constantly.
- Add basil, picante, salt and pepper.
- Stir well.
- Cover and cook 3 to 5 minutes.
- Add cheese and mix well.
