Ingredients

  • 2 teaspoons olive oil
  • 1/2 lb pork tenderloin (cut in 1/2 cubes)
  • 1 stalk celery (Chopped)
  • 1 small green pepper (Chopped)
  • 1 small yellow onion (Chopped)
  • 1 (16 ounce) can red kidney beans (Drained)
  • 1 (14 1/2 ounce) can diced tomatoes
  • 1 (15 1/4 ounce) can corn (Drained)
  • 1 1/2 tablespoons chili powder
  • 2 teaspoons cumin
  • salt and pepper (to your taste)

Method

  • In a large nonstick skillet, heat oil.
  • Add the pork,celery,green pepper.
  • Cook 5 minutes. Toss to brown on all sides.
  • Add beans, tomatoes, corn, chili powder and cumin.
  • Lower heat to medium and simmer for 15 minutes.
  • Season with Salt and Pepper to taste.
