Ingredients

  • 4 to 5 slices bacon
  • 1 Tbsp. margarine
  • 2 Tbsp. chopped onion
  • 2 Tbsp. chopped green pepper
  • 8 eggs
  • 2 Tbsp. water
  • 1/8 tsp. garlic powder
  • 1 Tbsp. chopped green chilies
  • 1 Tbsp. pimento
  • 3/4 c. shredded Monterey Jack cheese
  • 3/4 c. shredded sharp Cheddar cheese
  • guacamole and chips
  • refried beans

Method

  • Microwave bacon on rack or paper towels 45 seconds per slice. Place butter, onion and green pepper in bowl and microwave 2 1/2 minutes on High.
  • Beat eggs with water and garlic powder; microwave 5 minutes on Roast or Medium-high.
  • Add bacon, chilies, olives and pimentos.
  • Mix with cheese or place cheese on top. Cover and allow to melt.
  • Serve with guacamole and chips and refried beans for an easy nutritious brunch.
