Ingredients
- 1 c. self-rising corn meal
- 1/4 c. self-rising flour
- 1 can whole kernel corn, drained
- 1 medium onion, chopped
- 3/4 c. Cheddar cheese
- 2 eggs
- 1/3 c. corn oil
- 3/4 c. milk
- 1 bell pepper, chopped
Method
- Combine flour and corn meal; add eggs, corn oil and milk to dry ingredients.
- Blend well.
- Add the other ingredients and stir well.
- Pour into greased cast-iron skillet and bake at 250° for 1 hour or until golden brown.
