Ingredients

  • 1 lb. ground beef
  • 2 stalks celery
  • 1 medium onion
  • 1 green pepper
  • salt, pepper and cumin to taste
  • 1 can barbecue beans or red kidney beans, drained
  • 2 (8 oz.) cans Hunt's tomato sauce
  • 1 can drained hominy
  • grated sharp Cheddar cheese
  • crushed tortilla chips

Method

  • Brown beef; drain off fat.
  • Add celery, onion, pepper and seasonings; cook until almost tender.
  • Add beans, tomato sauce and hominy.
  • Simmer until thick.
  • Put in casserole dish; bake 15 to 20 minutes.
  • Top with grated sharp Cheddar cheese and crushed tortilla chips.
  • Bake until cheese bubbles.
  • Bake at 350° to 375°. Freezes well.
