- 1 lb. ground beef
- 2 stalks celery
- 1 medium onion
- 1 green pepper
- salt, pepper and cumin to taste
- 1 can barbecue beans or red kidney beans, drained
- 2 (8 oz.) cans Hunt's tomato sauce
- 1 can drained hominy
- grated sharp Cheddar cheese
- crushed tortilla chips
Method
- Brown beef; drain off fat.
- Add celery, onion, pepper and seasonings; cook until almost tender.
- Add beans, tomato sauce and hominy.
- Simmer until thick.
- Put in casserole dish; bake 15 to 20 minutes.
- Top with grated sharp Cheddar cheese and crushed tortilla chips.
- Bake until cheese bubbles.
- Bake at 350° to 375°. Freezes well.
