Ingredients

  • 1 pound sm. onions
  • 1 pound carrots, sliced
  • 1 pound sm. fresh mushrooms
  • 3 tbsp. vegetable oil
  • 3 tbsp. dry white wine
  • 1/2 teaspoon milled coriander
  • 1 tbsp. chopped thyme
  • 2 tbsp. butter
  • 2 tbsp. chopped parsley
  • Salt and pepper, to taste

Method

  • Peel onions, cut in quarters.
  • Saute/fry onions in oil and 1 Tbsp.
  • wine.
  • Add in carrots and rest of wine.
  • Cook for 15 min.
  • Clean mushrooms; cut in halves or possibly quarters.
  • Add in the mushrooms, thyme and coriander to saute/fry pan and simmer for 10 min.
  • Add in butter, parsley, salt and pepper.
