Ingredients

  • A 1/2 block of firm tofu
  • 1 egg
  • A 1/4 c of pine nuts
  • 2/3 c of marinated artichoke hearts
  • 1/3 c of feta cheese
  • 1/3 c of sun dried tomato
  • 1/3 c of roasted red bell pepper, chopped
  • A 1/2 yellow onion, chopped
  • 3 cloves of crushed garlic
  • 2 c of bread crumbs
  • 1 tbsp of Italian seasoning
  • Salt and Pepper to taste

Method

  • Blend tofu, egg, pine nuts, artichoke, cheese, tomato and pepper in a food processor until smooth.
  • SautA onion with garlic till translucent and add to mixture.
  • Add remaining ingredients.
  • Form into 1 inch balls.
  • Brown in olive oil over medium heat.
  • Place in baking dish, cover with spaghetti sauce and bake at 350 for 30 minutes.
