Ingredients

  • 1 sheet refrigerated pie dough
  • 1 lb Italian sausage
  • 6 slices bacon, chopped
  • 1 cup mashed potatoes
  • 6 eggs
  • 1 12 cups half-and-half
  • salt and pepper

Method

  • Preheat oven to 400 F.
  • Put dough in a pie plate, crimp the edges and line with foil.
  • Pour pie weights on top and bake until the crust sets (20 minutes).
  • Remove foil with weights ad bake the crust until it is golden (another 15 minutes).
  • Remove the crust from the oven.
  • Reduce oven temperature to 375 F.
  • Put sausage and bacon in a cold, large skillet over medium heat and cook until browned.
  • Drain fat from skillet.
  • Spread potatoes evenly over the bottom of the crust.
  • Place sausage and bacon over potatoes.
  • Beat the eggs with the half and half and pour over meat.
  • Bake until set (30-45 minutes).
